"Unstuffed" Peppers Casserole
Serves: 6
INGREDIENTS:
1 lb Shady Brook Ground Turkey (93/7)
3 cups diced peppers (yellow, red, green)
1 medium diced yellow onion
1 Tbsp minced garlic
1 tsp sea salt
15oz Tomato Sauce
1/2 cup shredded cheddar cheese
2 cups cooked brown rice
DIRECTIONS:
- Preheat oven to 350.
- In large skillet brown turkey, drain and set aside.
- In same pan saute peppers and onions until semi soft.
- Add garlic and salt.
- Stir in Tomato sauce and rice.
- Add turkey and combine well.
- Transfer to casserole dish sprayed with Olive Oil.
- Sprinkle cheese over top.
- Bake for approx 15 minutes or until cheese is melted to your desired consistency.
